Method
- Measure cold water using a coffee cup for reference. Use one cup of water for one cup of coffee.
- Add the cold water to the cezve (Turkish coffee pot).
- If desired, add sugar to taste (traditionally, one teaspoon per cup) and crushed cardamom pods for aroma.
- Add one heaping teaspoon of finely ground Turkish coffee to the cezve.
- Gently stir to combine all the ingredients.
- Place the cezve over low heat and do not stir from this point.
- As the coffee heats, it will start to foam. Just before it overflows, remove it from the heat. Repeat this process once more for a total of two foamings.
- Serve in small coffee cups with a glass of cold water on the side.
- Optionally, cover the cup with a small plate or saucer while serving.
